Protein Pasta Salad

This is a quick trick you can pull together as you cook dinner, or when you have a little spare time. The ingredients can be anything you have on hand. I used kidney beans, bowtie pasta, sundried tomatoes, and a couple cans of tuna. I brought it to another level by marinating my tuna in the vinaigrette for an hour, and by rehydrating my sundried tomatoes in a maple syrup, thyme, and apple cider vinegar brine. Make sure to run cold water over you noodles before you add them into the salad. I also like to give them a few minutes to absorb any leftover liquid. It’s amazing how much water dry pasta can absorb!
